Annealing of Tuber Starches


To a weighed quantity of the starch taken in a container, distilled water is added and mixes uniformly to obtain the required moisture level; the container is then sealed and kept in a water bath maintained at the specified temperature for different durations with gentle shaking. After modification, the samples are cooled to ambient temperature, filtered and dried at 55°C in an air oven to a uniform moisture content of 6-8%.
